Chocolate Peanut Butter Valentine's Day Cookies

My family loves the combination of chocolate and peanut, so on Valentine's Day, these chocolate peanut butter cookies are a big hit. The delicious peanut butter cookies pair perfectly with the peanut butter filled chocolate hearts. They are easy to make too!


The kids will love helping you bake these cookies too!


To make these cookies, you can start with your favourite peanut butter cookie recipe. Here is the one I use (because it is simple, delicious, and only dirties one bowl):

Ingredients:

1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1 tsp vanilla
1 1/4 cup all purpose flour


Directions:

1) Preheat oven to 375 degrees. 
2) In a large mixing bowl, use an electric mixer to combine butter, peanut butter, and sugars.
3) Add baking soda and baking powder, and beat until combined.
4) Add egg and vanilla, and beat again.
5) Stir in flour.

6) Scoop dough onto a cookie sheet.
7) Bake at 375 degrees for 8-12 minutes.
8) Push peanut butter filled chocolate hearts into cookies while they are still soft (i.e. before they are completely cooled).
9) Transfer to wire rack to cool.

How to Turn "Store Bought" Fortune Cookies Into an Elegant New Year's Eve Treat

I am a big fan of keeping things simple, and I absolutely LOVE a good shortcut. Today, I am sharing a really fun idea for New Year's Eve. With a few ingredients, and a couple minutes, you can transform "store bought" fortune cookies into an elegant New Year's Eve treat that will impress your guests!


You'll need: store bought fortune cookies, baker's chocolate, and sprinkles.

Then: 

1) Melt the baker's chocolate according to package directions. (I melted mine on medium heat for 2 minutes... stirring at 30 second intervals.)

2) Dip the cookies in the chocolate, and let excess drip off.

3) Dip the cookies in sprinkles, and place on wax paper to allow the chocolate to harden.

That's it!


They really are impressive looking when you put them on a nice tray.


It would be fun for kids to help make this treat too, and they'll love cracking them open and reading their fortunes. You can also dip a glass in chocolate and sprinkles for an added festive touch.


I love a good short cut, don't you? These fortune cookies are easy, inexpensive, and a lot of fun. You could even send them home as party favours with a "Wishing you good fortune in the new year!" tags. Fun, right?

Old Fashioned Shortbread Cookies... with homemade buttercream icing

I absolutely love a homemade shortbread cookie. I love the buttery flavour and flaky texture. It's the perfect cookie with a glass of milk or a cup of tea/coffee. Today, I am sharing a simple recipe for old fashioned shortbread cookies that is easy to make and tastes like the cookies your grandma used to make.


Here's the recipe for my favourite old fashioned shortbread cookies:

Ingredients:

  • 1 cup softened salted butter (room temperature for easy mixing)
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp vanilla
  • 1/2 cup icing sugar
  • 1/2 cup cornstarch

Directions:

Mix butter, flour, and vanilla together with electric beaters. Then, mix in icing sugar and cornstarch. (If they seem lumpy, use a sifter, but I usually just throw it all in "as is".) 

Beat until well mixed and crumbly, and then form into two discs with your hands. Cover with plastic wrap, and pop into the fridge for 30 minutes. Note: It looks crumbly when you are mixing it, but when you start to work with it in your hands, it all comes together nicely.

Roll out to 1/4 inch on a floured surface.

Cut with a cookie cutter and bake on Silpat or parchment (at 300 degrees) for approximately 15 minutes. (I used a 2 inch cookie cutter.)

Let cool, and then frost using my "small batch buttercream icing recipe". To make my icing, just beat together the following ingredients:

  • 4 tbsp unsalted butter softened
  • 1 cup powdered sugar
  • 1 tsp to 1 tbsp milk or cream
  • 1/4 tsp vanilla extract
  • pinch of salt


These really are delicious cookies, and they are great for sharing during the holidays too!

Peanut Butter Reindeer Cookies

I love Christmas baking, and my boys always enjoy when I make them special holiday cookies. Recently, I picked up some candy eyeballs at the grocery store, and I knew I could turn them into something festive and fun. I made a few modifications to my favorite peanut butter cookie recipe, and today I am sharing the recipe for my delicious and adorable peanut butter reindeer cookies.


To make these sweet cookies, you'll need the following ingredients:

1/2 cup butter (softened)
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1 tsp vanilla
1 1/4 cup all purpose flour
red Smarties
candy eyes
pretzels

Then:

1) In a large mixing bowl, use an electric mixer to combine the butter, peanut butter, white sugar, and brown sugar.
2) Add baking soda and baking powder, and beat until combined.
3) Add egg and vanilla, and beat again.
4) Stir in flour.
5) Roll spoonfuls of dough into balls, place on a cookie sheet, and bake in a preheated oven (at 375 degrees) for 7-10 minutes.
6) While the cookies are still warm, insert candy eyes, red Smarties, and broken pretzels to create reindeer faces.
7) Transfer to a wire rack to cool.

Wouldn't these be fun cookies to bake and leave for Santa? Kids will love rolling the dough into balls and inserting the candy and pretzels to make the faces.

Triple Peanut Butter Cookies

Have you ever had a peanut butter cookie craving? The next time the urge strikes, you need to try this recipe for triple peanut butter cookies. If you like peanut butter cookies, you'll love this cookie that is packed with THREE types of peanut butter goodness!


To make this cookie, you'll need:

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 egg
  • 1tsp vanilla
  • 1 1/4 cup all purpose flour
  • 1/4 cup peanut butter chips
  • 3/4 cup mini Reese's Pieces

Directions:
  1. In a large mixing bowl, use an electric mixer to combine butter, peanut butter, and both sugars.
  2. Add baking soda and baking powder, and beat until combined.
  3. Add egg and vanilla, and beat again.
  4. Stir in flour.
  5. Stir in peanut butter chips and mini Reese's Pieces.
  6. Spoon onto cookie sheet, and bake in preheated oven (at 375 degrees) for 8-10 minutes.
  7. Transfer to wire rack to cool.

These cookies were a huge hit with my boys. If you are a fan of peanut butter cookies, you are going to love these triple peanut butter cookies.
