No Bake Energy Balls (with ancient grains & super seeds)

When my boys get home from school, they are starving and looking for snacks. I struggle to find options that offer a compromise between something healthy and something sweet... but the recipe I am sharing today checks both boxes! These no bake energy balls are delicious, and they pack a "power punch" that comes from the PC Blue Menu* ancient grains & super seeds blend.


To make these no bake energy balls, you'll need the following ingredients:
  • 1 cup (uncooked) oatmeal (I used quick oats.)
  • 2/3 cup sweetened shredded coconut
  • 1/2 cup peanut butter (So they are not safe to send to school if food allergies are a concern.)
  • 1/4 cup PC Blue Menu* ancient grains & super seeds (You can also up this to 1/3 if you want a big more of a boost.)
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tsp vanilla
  • 1 tsp salt
Directions:
  1. Stir all the ingredients together in a large bowl. (I find it easiest to just use my hands.)
  2. Cover, and let chill in the fridge for 30 minutes.
  3. Once chilled, roll the mixture into 1" balls. (I used a cookie scoop to measure so that I was able to create 20 uniform balls.)
  4. Enjoy! You can store these energy bites in an airtight container in the fridge for about a week.

Travel Snack Packs

Feeding and entertaining kids while travelling can be a challenge. I like packing lunches and snacks to take with us because it is much more economical and convenient than grabbing food "on the go". For our upcoming family trip to Florida, I packed some fun travel snack packs for my boys to take in their backpacks.


I started with a storage box from the dollar store, and I packed each section with some things that I had in my cupboard and some special "vacation treat" purchases.


I included things like: cereal, pretzels, crackers, gum, and sweet treats.


I finished by labelling my boys' travel snack boxes with their names.


Cute, right? I think this is a really fun way to pack snacks for a special trip. Do you think your kids would enjoy these travel snack boxes?

{Toy Story} Family Movie Night

Every Friday night is "family movie night" at our house, and last Friday we had a special screening of "Toy Story".  This is one of our all time favorite movies, so today I am sharing some easy and super-fun Toy Story snack ideas with you.


We started the night by having some "Pizza Planet" pizza for supper.  Then, it was on to the snacks.


To create the snack table, I dug out some of our Toy Story toys, purchased some snacks, and added some fun "word bubbles" for the characters to hold.  My boys thought the word bubbles were a lot of fun.  Here is what they said:

1)  Woody had some trail mix, and his sign said, "Howdy Partner!  Try some trail mix."


2)  Mr. Potato Head had some popcorn, and his sign said, "Try some popcorn... it is way better than chips."


3)  Alien had some Reese peanut butter cups, and his sign said, "Take me to your leader... and I will let you eat one of my delicious UFOs."


4)  Bullseye had some water, and his sign said, "Welcome to my watering hole."


5)  Buzz had some Smarties, and his sign said, "This snack is yummy... to infinity and beyond!"


Fun, right?  I think these snacks would be fun at a Toy Story themed birthday party too, don't you?
